This is one of my favorite summer breakfasts! It is especially perfect if you need a breakfast to-go or if you like to eat your breakfast at work, like I do. I enjoy this served cold, straight out of the fridge, which might sound a bit odd for oats, but it works so well with the yogurt and mango. This take on oatmeal is cooling and refreshing in the summer while still maintaining the hearty and satiating qualities that make oatmeal such a great choice for breakfast. The earthiness of the turmeric compliments the sweetness of the mango so well. Don’t worry, this isn’t thick, lumpy, gloopy oatmeal - I’ve tested the proportions to achieve the perfect consistency . This is such a nicely balanced and nutritious breakfast and is truly unique to any other I’ve had, so it’s sure to start your morning off on a great note!

I recommend using unsweetened soy milk or high protein non-dairy yogurt for extra protein!

  1. Combine the oats, chia seeds, hemp hearts, turmeric, non-dairy milk, and 1/2 TBS maple syrup in a jar or bowl. Stir well. Cover and leave in the fridge overnight. It will look runny, but the oats and chia seeds will soak up the liquid!
  2. In the morning, add a couple spoonfuls of yogurt and top with the cubed mango and additional maple syrup if you like it on the sweeter side.
