5 Minute Bean Chilaquiles
I made this recipe a lot in college and keep it on deck for busy nights or when we’re trying to save money because it only requires 3 inexpensive ingredients (plus spices), and about 5 minutes to make.
Chilaquiles are a Mexican breakfast, traditionally made with freshly fried tortillas tossed or simmered in sauce and are often served with eggs. My take on it is definitely not traditional and takes several shortcuts to make it a really inexpensive and convenient dish to make, but it’s always hearty and satisfying. The chips turn soft in the sauce, which might sound strange if you’ve never tried it before, but it’s so comforting, delicious, and texturally interesting!
All you need is:
tortilla chips
a can of crushed tomatoes
a can of black beans
spices (chili powder, cumin, salt + pepper)
completely optional toppings: lime, avocado, vegan crema or cheese, hot sauce

5 Minute Bean Chilaquiles

Instructions
- Drain and rinse the beans.
- In a small saucepan, combine the crushed tomatoes, black beans, and spices. Heat to a simmer. Remove from heat.
- Place a few large handfuls of tortilla chips in a bowl.
- Spoon over half the bean and tomato sauce.
- Top with a squeeze of lime, hot sauce, cheese and/or avocado.
- Mix it up to evenly coat the chips in sauce. Enjoy!
