Best Ever Avocado Toast
Avocado toast is a hallmark of the millennial generation and it’s a target of snarky commentary, but there’s a reason it’s so popular! In a country where breakfast typically equates to pancakes, waffles, cereal, or a sugary snack bar, there are few savory options. Savory options, before the avocado toast craze, were almost guaranteed to be eggs and bacon or sausage. Now we have a new plant-based star of savory breakfast in America! This is not to say that avocado toast originated in the U.S….simply, that it’s nice to have a widely accepted, and vegan-friendly, offering available.
Avocado toast is appealing for many reasons. It’s texturally interesting with creaminess from the avocado and crispiness from the toast. If you use a fresh loaf that you can cut, yourself, and cut it thick, you’ll have the contrast of the soft, chewy center of the bread and the crispy crust which makes this simple breakfast feel extra luxurious. It’s also quick and easy to make, but yet satiating and filling and won’t cause a sugar crash. Lastly, there are limitless topping options. I’ve seen avocado toast with poached eggs, mashed peas, feta, cream cheese, tomato, etc. but I prefer to keep it simple and utilize a game-changing ingredient.
As much as I’ve just griped about sugary breakfasts, a little sweetness transforms the avocado toast. Agave is the star ingredient. Really good food incorporates multiple different flavors (salty, sweet, spicy, sour, bitter) because it excites and satisfies the palette. While I don’t use anything sour or bitter in this recipe, the salty, spicy, and sweet categories are covered and that makes this toast so delightful!
This is my tried-and-true, go-to avocado toast recipe (in fact, it’s the only version of avocado toast I’ve ever made because it’s so good!) It will make you feel like you’re dining at a cute cafe, but a lot more economical. This is a good thing because you’re going to want to eat it every day!
I know it’s not a very exact recipe, but you really can’t go wrong and can tailor it to your liking.

- Toast the bread to your preferred toastiness.
- Slice the avocado in half. Begin mashing the avocado inside the skin, then scoop it onto the toast and continue mashing until it is an even consistency across the toast. If the avocado is small, I typically use 1 half per slice of bread.
- Sprinkle the salt, pepper, chili flakes, and everything but the bagel seasoning on the avocado. Be generous with all of these!
- Drizzle agave over the avocado toast. This is the best part!
